Monday Munchies - Garlic Chicken

Ingredients
  • 2 lbs chicken thigh fillets
  • 1 tbsp paprika
  • 2 tbsp olive oil
  • 8 cloves garlic, unpeeled
  • 1/4 cup brandy or sherry
  • 1/2 cup chicken stock
  • 1 bay leaf
  • 2 tbsp fresh flat leaf parsley, chopped
Preparation
  1. Trim any excess fat from the chicken and cut the thighs into thirds. 
  2. Combine paprika with some salt and pepper in a bowl. 
  3. Toss the chicken in the spices. 
  4. Heat half the oil in a large frying pan over high heat and cook the garlic for 1-2 minutes, or until brown. 
  5. Remove from the pan and set aside. 
  6. Add half the chicken and cook for 5 minutes, or until brown, remove from pan and repeat with remaining chicken, adding oil if needed.
  7. Return all the chicken to the pan, add the brandy, boil for 30 seconds then add the stock and bay leaf. 
  8. Reduce the heat, cover and simmer over low heat for 10 minutes.
  9. Meanwhile, place the garlic in a mortar and pestle or a small bowl. 
  10. Add the parsley and pound to form a paste. 
  11. Stir into the chicken, cover and cook for 10 minutes, or until tender. Serve hot. 
This goes really well with rice but crusty bread would accompany well too.

The day after Christmas

I am writing this in the UK, it is Sunday 26th of December, and it is NOT Boxing day.

Why are so many people getting it wrong, including the BBC.

The first week day after Christmas was when the churches opened there 'Alms Box'. The day the boxes were opened became known as Boxing Day. 

This never happened on a Sunday (the day of worship)

This means that, strictly speaking, Boxing Day is the first weekday after Christmas (see definition)

So Today is Christmas Sunday and tomorrow id is Boxing Day, at least here in the UK.

Monday Munchies - Devils on horseback

Ingredients
  • 24 Prunes. Get the ready to eat ones with the stones removed. 
  • 12 rashers Streaky Bacon 
  • 50g Mango Chutney (Optional)
  • Brandy or Tea for marinating 

Preparation
  1. Pre-heat oven to 200°C: 400°F: Gas 6 
  2. Soak the prunes in either brandy or tea for between 30 minutes and 24 hours, then remove the stones if you did not buy the ready to eat ones. 
  3. Stuff each prune with ½ tsp mango chutney. (optional)
  4. De-rind and stretch the bacon with the back of a knife to prevent it shrinking, cut each rasher in half. 
  5. Wrap a piece of bacon round each prune. 
  6. Place on a baking tray. 
  7. Keep them packed up tight so that they don't come apart (alternatively pierce with a cocktail stick to prevent this). 
You can prep them up the night before so all you have to do is 
  1. Bake for about 8 minutes. 
  2. Server with your Turkey.

Monday Munchies - Grilled Serrano Ham and Manchego Cheese Crostini

Ingredients
  • 12 slices French bread, sliced on the diagonal into 1/2-inch thick slices 
  • Olive oil 
  • 12 thinly sliced pieces Serrano ham 
  • 12 thinly sliced pieces Manchego cheese 
  • Whole grain mustard 
Preparation
  1. Preheat grill. 
  2. Brush each slice of bread on one side with olive oil and grill, oil-side down until lightly golden brown. 
  3. Turn over and divide cheese among bread slices. 
  4. Top each slice of cheese with the slices of ham and grill until the cheese begins to melt. 
  5. Serve with the mustard.

The Tron Lightcycle build was an answer to the question "How are you going to top that?" This build was special because it showed alot of people that maybe didn't believe in us, that we could accomplish the impossible. The final product is nothing short of amazing.The real question after seeing this bike on the street is, you guessed it - "How are you going to top that?" Now that it has been finished, we look forward to a new build with new challenges.



Sorry to say that the music is just to loud. I really wanted to hear the bike.

Now Playboy

And the last bit is meeting of TRON, motercycles and Playboy. The guys over at Playboy just took wraps off a new feature called GAME ON, which pays tribute to the TRON revival that’s hitting peak velocity with the release of TRON:Legacy.



The two models are Irina Voronina and Sasckya Porto with body paints glowing with the cybernetic blue and orange hues of the world of TRON.

Monday Munchies - Crushed new potatoes with flat-leaf parsley and Parmesan

Ingredients
  • 675g (1 1/2lb) baby new potatoes, scraped or scrubbed
  • 6 tbsp extra-virgin olive oil
  • handful fresh flat-leaf parsley leaves
  • 6 tbsp freshly grated Parmesan
  • Sea salt and freshly ground black pepper
Preparation

  1. Place the potatoes in a large pan of boiling water and bring to the boil. Cover and simmer for 15-20 minutes or until tender, then drain well.
  2. Tip the cooked potatoes into a large bowl. 
  3. Add the olive oil and with the back of a fork, gently crush each potato until it just splits. Season, and then mix carefully until all the oil has been absorbed. 
  4. Finely chop the parsley and stir through the potatoes with the Parmesan, then season to taste and tip into a warmed bowl. 
  5. Serve at once.

No seriously.

Some people over at MIT have built three different wallets.
  • Bumblebee. - The wallet buzzes through a vibrating motor whenever your bank processes a transaction.
  • Mother Bear, - The wallet protects the money within it when you need to be thrifty with a hinge that resists opening.
  • Peacock. - The wallet swells and shrinks to reflect the balance in your accounts.

We have trouble controlling our consumer impulses, and there's a gap between our decision and the consequences. This is magnified by the digitization of money. When we pull a product off the shelf, do we know what our bank account balance is, or whether we're over budget for the month? Our existing senses are inadequate to warn us.

The Proverbial Wallet gives us that financial sense at the point of purchase by un-abstracting virtual assets. Tactile feedback reflecting our personal balances and transactions helps us develop a subconscious financial sense that guides responsible decisions. In addition to providing a visceral connection to our virtual money, tactile output keeps personal information private and ambient.

Having a moan about Flickr

Having just come back from holiday in the beautiful North West East of England, I decided to put up a selection of our holiday snaps onto Flickr

Sorry no, I don't want to pay $24.95 a year for something I don't use that much.

I have not put that many photo's up just 103 from our holiday in Spain and 75 from this last holiday.

I will have to republish them to Facebook, and put up with the adverts, etc.

I think I will look at Picasa and see what I can do with that, since I use it for this blog.

Monday Munchies - Ajillo Mushrooms

Few tapas taste more Spanish than champiñones al ajillo (garlic mushrooms), dripping with olive oil, garlic and dry Spanish Sherry. To make this tapa even more authentic, be sure to serve the mushrooms with plenty of fresh, crusty bread to mop up the delicious juices. This serves 4 and takes about 10 minutes to prep and about 12 minutes to cook.
Ingredients
  • 2 fl. oz olive oil 
  • 8 oz mushrooms, wiped clean and quartered 
  • 6 cloves garlic, minced 
  • 3 tablespoons dry sherry 
  • 2 tablespoons lemon juice 
  • 1/2 teaspoon dried red chilli, seeded and crumbled 
  • 1/4 teaspoon Spanish paprika 
  • Salt and pepper, to taste 
  • 2 tablespoons chopped parsley 
Preparation
  1. Heat the oil in a frying pan and sauté the mushrooms over high heat for about 2 minutes, stirring constantly. 
  2. Lower the heat to medium and add the garlic, sherry, lemon juice, dried chilli, paprika, and salt and pepper.
  3. Cook for about 5 minutes or until the garlic and mushrooms have softened.
  4. Remove from the heat, sprinkle with chopped parsley, and serve on small earthenware platters.

Monday Munchies - Chicken badami korma

Ingredients
  • A handful of almonds
  • A splash of oil
  • 1 black cardamom pod, lightly crushed
  • 5 green cardamom pods, lightly crushed
  • 4 black peppercorns
  • 2 tbsp ginger and garlic paste
  • 1 clove garlic, chopped finely
  • 1 small piece of ginger, 2-3 inches, sliced
  • 1 kg chicken, skin removed, the carcass split in half then jointed, including the neck
  • 2 tbsp ground coriander
  • 2 tbsp red chilli powder
  • 1 tsp crushed red chillies
  • ½ tsp garam masala powder
  • ½ tsp carom seeds
  • ½ tsp whole cumin seeds
  • 1 pinch ground turmeric
  • 600g white onions, roughly chopped
  • 1-2 tbsp vegetable oil
  • 250g plain natural yoghurt
  • Salt to taste
  • 1 tsp ghee (clarified butter)
  • 1 clove garlic, chopped finely
  • Few thin slices ginger

Preparation

  1. Blanch the almonds briefly and drain them. Peel half of them but leave the skins on the rest.
  2. Heat the oil in a non-stick pan and add the cardamom pods, peppercorns, and the ginger and garlic paste. Add 1 clove of garlic and a few strands of the ginger and fry off for a minute.
  3. Stir in the meat, coating it in the spices and cook until the chicken is no longer translucent. Add the remaining spices and stir thoroughly.
  4. In a separate pan, fry the onions until soft and combine half of them with the unpeeled almonds in a food processor. Blend the mixture and stir it into the meat mixture along with the remaining fried onions.
  5. When the oil begins separating and rising up the sides of the pan, add the yoghurt and the whole, peeled almonds.
  6. Stir the mixture thoroughly, adding 110ml of water to tenderise the meat. Allow the curry to cook gently for about 30 minutes or until the meat is cooked through and remove it from the heat.
  7. Heat the ghee in a small pan, add the garlic and the ginger and fry off for 30 seconds before stirring it into the meat.

Here is just a load of fun stuff to do with the game portal.

First here is a portal gun.

This spectacular, one-of-a-kind homemade Portal gun is for sale in this year's Child's Play charity auction to raise money to provide games and toys to sick children. The maker, Harrison Krix, has also documented the build.



Next is a portal shirt

Notorious hacker Benjamin Heckendorn -- aka Ben Heck -- has created a “see-through” Portal t-shirt that is perfect for freaking out kids at Halloween.

The t-shirt appears to show a hole through the wearer’s torso which reveals the scenery behind them, in homage to Valve Corporation’s puzzle platformer Portal. To create the effect, Heck cut a portal-shaped hole in the front of a t-shirt and positioned an LCD display behind the hole. On the back of the t-shirt was a CCD camera.

Whatever the camera captures behind the wearer of the t-shirt is displayed on the screen at the front, thus giving the impression of a gaping hole in the person’s torso. Unfortunately it doesn't work the other way -- there's no screen on the back. Though, that might make it a little heavy.

Monday Munchies - Sticky Ribs

Ingredients

  • 1kg pork spare ribs
  • 1 onion sliced
  • 1 tsp mixed dried herbs
  • 5 tbsps tomato ketchup
  • 3 tbsps orange or apple juice
  • 75g dark brown sugar
  • 1 tbsp mustard
  • 3 tbsp worcestershire sauce
  • 1 tsp Tabasco
Preparation

  1. Preheat oven to 200 C/400 F/Gas6.
  2. Place ribs, onions and herbs in a large pan and cover with water.  Bring to the boil, then lower the heat and simmer for 20 minutes.
  3. Mix together all the other ingredients.
  4. Strain the spare ribs and arrange in a single layer in a shallow ovenproof dish and spoon over the glaze.
  5. Bake for 20 minutes. (bit longer if you want them really sticky!!)

Monday Munchies - Chorizo Penne

Ingredients
  • 350g dried penne (fresh is better)
  • 250g chorizo sausage (cooking chorizo if you can get it)
  • 1 tablespoon olive oil
  • 2 shallots, peeled and finely chopped (onions will do)
  • 1 tablespoon of picked thyme leaves
  • 2 tablespoons sherry vinegar
  • 125ml whipping cream (or you can use Crème fraiche)
Preparation
  1. Bring a large saucepan of salted water to the boil. Add the penne and cook according to the packet instructions (between 4 and 15 minutes depending on if it is fresh or dried).
  2. Slice the chorizo diagonally into thin slices, no thicker than 0.5cm. Heat the oil in a non-stick pan, add the shallots and cook over a medium heat for 2 minutes to soften. Add the chorizo and cook over a high heat for 2 minutes until it begins to release oil. 
  3. Add the sherry vinegar and cook for 1 minute over a high heat, stirring to deglaze the pan. Add the cream and thyme leaves, bring to the boil while stirring and remove from the heat. Season with crushed sea salt and freshly ground black pepper.
  4. To serve, drain the penne, toss with the chorizo cream and arrange in serving bowls. Finish with shaved parmesan and rocket.

Friday Fun - Bollocks

Bollocks is a word of Anglo-Saxon origin, meaning "testicles". The word is often used figuratively in British English, as a noun to mean "nonsense", an expletive following a minor accident or misfortune, or an adjective to mean "poor quality" or "useless". Similarly, the common phrases "Bollocks to this!" or "That's a load of old bollocks " generally indicate contempt for a certain task, subject or opinion. Conversely, the word also figures in idiomatic phrases such as "the dog's bollocks" and "top bollock(s)", which usually refer to something which is admired, approved of or well-respected.

Tuesday Tech - Documentation: a Vital Business Tool

Having been a small business owner and interactive director in other businesses, there are hundreds of tasks I perform on a daily or weekly basis that only I know how to do. Some of them are mundane technical tasks, while others require higher-level thought processes. Some might see this as job security, but I know it's a liability.

In an absolute worst-case scenario, you could die or become disabled. More likely, you'll be sick from time to time, and you'd probably like to be able to take a vacation every now and then without your mobile phone ringing nonstop.

When I realized the number of tasks no one else could perform where I worked, I decided to start documenting as many procedures as I could. Below is a general overview of how I began to document the day-to-day procedures.

Passwords

One of the most important pieces of information to document is your passwords. There are lots of ways to manage passwords, but the key is to not be the only person that knows them. Make sure you have passwords stored in a secure place, and that a colleague has access to them in the case of an emergency.

Procedures

I've been documenting procedures using share point. I created a folder titled "Processes and Procedures" and shared it with our entire team. In it, I've created about a dozen documents (so far) that walk through how to perform different tasks in detail.

If you really think about every step in a process, even the simple procedures we take for granted can seem fairly complicated. For instance, one of the processes I have documented is the purchase or renewal of an SSL certificate. At first, it sounds relatively simple, but the procedure is actually quite complex.

What to Include

When documenting procedures, avoid vague commands and instead include step-by-step instructions. Use bulleted lists, and add screenshots or, if you have time, video of the actual procedure. The more detailed, the better. You want enough information so that anyone can pick up the instructions and complete the tasks successfully.

Keep Documents Updated

Once you have most, if not all, procedures documented, make sure you keep them updated. Passwords change fairly regularly, and web services are constantly changing their user interfaces, so documentation can become out of date quickly. It's of no use if it's inaccurate, so be sure to update your documents as soon as you notice any changes.

Peace of Mind

I've barely scratched the surface with documenting all the procedures here, but I already feel so much better. Knowing that a colleague can easily step up in an emergency and take over with little or no instruction makes me feel so much better about being out of the office for an extended period of time -- whether it's a planned vacation or an unplanned emergency.

One More Benefit A positive side benefit to documenting your procedures now is that if you hire a person to perform some of these tasks (perhaps to free up some of your time), you'll have a detailed manual. They may still need some additional training, but you'll be off to a great start!

Monday Munchies - Chicken Karhai

Recipe Details


Serves 6


Make sure you have everything prepared


Ingredients

  • 12 skinned boneless chicken thighs
  • 1 tsp salt
  • 1 tsp ground turmeric
  • 4 tbls vegatable oil
  • 2 whole dried chillies
  • 1 tsp black mustard seeds
  • ½ tsp whole fennel seeds
  • 2 tsp dhana jeera (Dhana jeera is a mixture of ground coriander and ground cumin so you can mix your own.)
  • ½ tsp garam masala
  • 1 ½ tsp chilli powder
  • 2 ½ cm piece fresh root ginger, peeled and grated
  • 1 medium onion, sliced
  • 2 green peppers deseeded and cut into large cubes
  • 100ml water
  • 1 tsp malt vinegar
  • ½ tsp tomato puree
  • ½ tsp sugar
  • 225g tomatoes roughly chopped
  • coriander to garnish

Preparation


  1. Rub the chicken with salt and turmeric and leave to stand.
  2. Heat the oil in a large shallow pan and add the dried chillies.  As the chillies begin to darken add the chicken and cook for 10 minutes or until golden.  Remove the chicken from the pan and set it aside.
  3. Add the mustard seeds to the hot oil.  As soon as they begin to pop add the fennel seeds, dhana jeera, garam massala, chilli powder and root ginger.  Mix thoroughly and fry for 2 minutes or until they are cooked and the oil begins to separate.  Remove and discard the dried chillies.
  4. Add the onion and peppers to the pan and cook for a further 2 minutes.  Return the chicken to the pan.  Add the water, vinegar, tomato puree and sugar.  Cover and cook slowly for 20 minutes or until the juices run clear when the chicken is pierced with a knife.
  5. Remove the lid, add the chopped tomatoes and cook over a high heat for 3 – 5 minutes until most of the liquid has evaporated and a rich sauce is left.  Garnish with the coriander and serve sizzling hot.

Monday Munchies - Parma wrapped blue cheese chicken pockets with roasted asparagus

Ingredients
  • 4 x 100g (4oz) skinless chicken breast fillets
  • 100g (4oz) blue cheese, cut into 4 even-sized pieces (such as Dolcelatte, Cashel Blue or Stilton)
  • 12 fresh sage leaves
  • 8 slices Parma ham
  • 2 tbsp olive oil
  • 550g (1 1/4lb) asparagus spears, trimmed
  • Maldon sea salt and freshly ground black pepper

Preparation

Preheat the oven to 180C (350F), Gas mark 4. Starting at the thick side of each chicken fillet, cut a deep horizontal pocket into each breast. Stuff with a piece of the blue cheese. Lay three sage leaves on top of each breast; then wrap each one in two slices of the Parma ham. Tie with cotton string to secure and season to taste.

Heat half the oil in a large ovenproof frying pan and fry the chicken parcels for 1-2 minutes on each side until just sealed.

Meanwhile, toss the asparagus spears in the remaining oil. Scatter around the chicken parcels and roast for 8-10 minutes until the chicken pockets and asparagus spears are until cooked through and tender. Arrange on warmed plates to serve.

30 Days Of Me - Day 29 - In this past month, what have you learned

Don't do this type of thing again. (I don't have much time free and this has taken a lot of it.)
Looking in at your self can be very hard, but worthwhile.
I can actually write a little something every day, even if it is rubbish.
I've learned a lot about the friends around me.
I've learned that family and friends make the world go 'round.
Some of the best presents are not objects, but actions that people take.

This was me running Toby at Breach Lane on 8th Nov 2009. As you can see he loves trashing a course.


And this is me training with Toby on 9th Aug 2010. The aim was for me to stay in the box and push him out and over the jumps with out knocking them down.

What has changed. Two main things.
  • Both Toby and I have improved.
  • I have found some people who I thought I would never find. They are all very special, but so far away.

30 Days Of Me - Day 27 - Why are you doing this 30 day challenge

It seemed like a bloody good idea at the time!

I am a bit sick of it now, and I've only kept doing it because I started it, and hate leaving things unfinished.

Sure you have read a lot of the other posts talking about how it was a idea that started wherever it started and then when I heard about it, it was spreading quite quickly around Twitter etc etc.

There were quite a few topics that I was interested in writing about – a nice mix of looking in at yourself and fun. It has given me a chance to post some video and photographs and images.

So I basically thought that this Bloggers Challenge could give me some motivation, and also put a bit of content into my new blog.

And it worked, I made some lists and got some things done, started to think of what I can put on here on a regular basis.

Well they are friends. I don't really understand what is being asked.


Your true friends always come through for you. Whether for a nice comment or a helpful gesture, whether its something really small or a huge big favour.


Real Friends are difficult for me. I don’t think that I let any one get to close. When I was about 14 my best mate killed his mum (an accident) and then committed suicide.

After that I have never really let any one else to get close, to soon.

So any one who I can call my friend "Thank you"

I have had many friends who have drifted away. When I see them again after a few weeks, months, or even years we can pick up a conversation straight away.

A few of my friends are no longer with us. Seeing them off I feel that the world has changed a little bit, and a bit we cannot get back.

I know that there are more people out there who will become my friend. So to you I say "Hi".

Monday Munchies - Chicken and Pineapple salad

Ingredients
  • One cooked chicken
  • 2 pineapples
  • small bunch of seedless grapes
  • four sticks of celery
Sauce


  • 6 tablespoons mayonnaise
  • 1 tablespoon apricot jam
  • 1 tablespoon peanut butter
  • 1 dessertspoon curry powder

Optional

  • chives
  • peanuts

Preparation

  1. Mix all above ingredients, adjust curry powder and peanut butter amounts to suit own taste.
  2. Cut chicken into bite size pieces
  3. Cut pineapples in half length ways, scoop out fruit and cut into bite size pieces, leaving shell of pineapple to be bowl for finished meal.
  4. Slice celery sticks
  5. Combine chicken, pineapple, grapes and celery, add sauce and mix well.
  6. Place above into pineapple shells to serve
  7. Optional garnish with chopped chives and peanuts


    30 Days Of Me - Day 25 - What I would find in your bag

    I don't have a 'bag' but I do have a rucksack so that will have to do. Like most other things I have it is sparse in it's contents, as I always try to combine things.

    A few years ago I always use to carry on me.

    Mobile phone
    Camera
    PDA (Palm first then went to a Psion)
    Walkman (or some type or some other music player)
    Tape recorder (my note book)

    but now that is just down to a iPhone.

    Back to my rucksack (it is very geeky). Just now it is a bit full. I don't usually carry more that one laptop. Three will fit in my bag, and do at times.

    Compaq Laptop with Widows Server 2008 R2. It also runs Server 2003, Windows 7 and Windows XP
    MAC Book (Snow Leopard,at the moment, seeing if I can get Lion)
    iPhone (Sometimes in the bag sometimes in my pocket or on desk)
    Sony Ericsson P900 (Spare phone)
    A number of pen drives from 1Gb to 16Gb.
    Torch 
    Various Key rings. Work, home, the vehicle I am driving.
    Wallet. no money in here.
    Credit Card Holder
    Purse; some change, a few notes and another pen drive.
    SD micro card converter.
    Very small cross head screwdriver (I wondered where that was)
    External HD 350 Gb
    A few blank DVD's and a blank CD.
    Space pen.
    FM transmitter for the iPhone
    BlueTooth head set. It is a pain my iPhone can not get it's act sorted where it wants to put it's output.

    30 Days Of Me - Day 24 - A letter to your parents

    Oh this is difficult. I said on day one that I was adopted. So here is a definition of the word.

    par·ent
    –noun
    1. a source, origin, or cause.
    2. a protector or guardian.
    So I think that I have two sets of parents as they both fall into the definition. One set is my source or origin (mother & father) and the others was my protector or guardian (mum & dad) when I was growing up.

    Actually I don't think that you really grow up until you loose your parents, they should be some people who you can always talk to and feel 'warm & cosy' when they are about. But just like your own children they can be annoying.

    To my Mother & Father. (Who are the people who are my blood parents)

    You let me arrive into this world.
    It is you that I am made from.
    You are the foundation that made me.
    I understand why you had to give me up. It must have been so hard.
    I am just so glad that I have been able to contact you at long last. It was a part of me that I always felt was missing.

    You chose me, and after me you still chose to adopt two others. This made us a family.

    You have always tried to help me whenever you can.

    Lets start this one with a definition.

    I always think that the synonyms are the best way to get a handle on a words definition.
    There are two things that I really want.

    Time & Space

    Time to do the things that I want to do and space to keep my stuff.

    I feel that I have very little time of my own.

    All the time I feel that my space is shrinking.

    30 Days Of Me - Day 20 - Someone you see yourself marrying / being with in the future

    This is a trick one.

    Still see myself with Deb. I could never think of being with anyone else.

    We met when Deb was working as a Saturday shop assistant at my mum's gift shop. She wanted the day off so I covered. 

    This was the first time that we met when she came into the shop with her best friend. Deb has a story to tell about that meeting or should I say what she said after to her best friend. 

    We started going out when we were 17, engaged at 19, married at 21, and Emma was born 4 years later.

    Some people said it would never last.

    30 Days Of Me - Day 19 - Nicknames you have; why do you have them

    I only have two that I can remember. Well that is apart from 'Oy you'
    1. Elmo - (from school) Don’t think it was anything to do with Sesame Street, I don’t really know where it came from. 
    2. Gadget - (from a place I worked) I was an Quality Control Inspector in a sheet metal bashing factory. Where I use to inspect all the work being carried out. I always had the exactly the right measuring instrument on me when some one wanted an inspection done.

    Monday Munchies - Crispy mozzarella topped chicken

    It’s a delicious chicken dish topped with mozzarella with a special sauce.

    Ingredients
    1. 100g toasted fine breadcrumbs
    2. 100g toasted mixed nuts, crushed
    3. 50g plain flour
    4. 2 medium eggs
    5. 1 tablespoon finely chopped flat-leaf parsley
    6. 4 skinless, boneless chicken breasts
    7. 10 tablespoons olive oil
    8. 2 mozzarella balls, drained and sliced
    9. Salt and pepper

    For the sauce
    1. 5 tablespoons olive oil
    2. 1 large red onion, finely sliced
    3. 4 anchovy fillets in oil, drained. (original recipe said 8, even 4 can be too many,) 
    4. 800g tinned cherry tomatoes
    5. 2 tablespoons finely chopped flat-leaf parsley
    Preparation
    1. To prepare the sauce, heat the olive oil in a medium saucepan and fry the onion and anchovies for 6 minutes until golden. Add in the cherry tomatoes and parsley, season with salt and pepper and cook, uncovered, over a medium heat for about 10 minutes, stirring occasionally with a wooden spoon.
    2. Meanwhile, preheat the grill. Mix together the breadcrumbs, nuts and flour on a large plate. Gently beat the eggs with the parsley and a pinch of seasoning in a large bowl.
    3. With a meat mallet, beat the chicken breasts between two sheets of clingfilm on a board until the breasts are 1cm thin. Dip into the eggs, then coat in the breadcrumb mixture.
    4. Heat the olive oil in a large frying pan and gently fry the chicken for about 4 minutes on each side until crisp and golden. Transfer to kitchen paper to allow any excess oil to drain.
    5. Put the chicken on a baking tray and top each one with two slices of mozzarella. Place under a hot grill until the cheese has melted.
    6. To serve, spread 4–5 tablespoons of the sauce in the centre of each plate and place a chicken breast on top.

    30 Days Of Me - Day 18 - Plans / dreams / goals you have.

    At the moment I don’t really have many.

    1. A long term goal it to get to grade 7 with Toby in KC agility. 
    2. I also want to get to a UK final with him. We are both able to get there and we both have a lot to learn, and it will take a few years. I guess about another 5 years making him 7 years old.
    3. Go back to being self employed.It is so much better.
    4. Get to New Zealand to see some very special people.

    I do love the film.


    But actually I just want to be me. May be with a bit more money so I can have a bit more time and space.

    Blog Action Day - Water

    Today 15th October 2010 is Blog Action Day. According to Change.org
    "Blog Action Day is an annual event held every October 15 that unites the world’s bloggers in posting about the same issue on the same day with the aim of sparking a global discussion and driving collective action. "
    This year, Water as a valuable resource is picked as the theme. Why?
    "Right now, almost a billion people on the planet don’t have access to clean, safe drinking water. That’s one in eight of us who are subject to preventable disease and even death because of something that many of us take for granted.
    Access to clean water is not just a human rights issue. It’s an environmental issue. An animal welfare issue. A sustainability issue. Water is a global issue, and it affects all of us."
    Water. It might be something you take for granted; it might be something you struggle for. Lack of it might cause your crops to fail, too much of it might wash your house away. Perhaps you make your living on the waters, or perhaps you live landlocked or dry country. Whatever your circumstance, water affects your life.

    I don't have that much music (about 35Gb), I only have a 16Gb iPhone so I have to be selective in what I put on it. So what is on it is stuff that I like to hear.

    30 Days Of Me - Day 13 - A letter to someone who has hurt you recently

    I don't get hurt by many people, however there are two who keep hurting me.

    I keep telling them what they are doing, but they both ignore me and my feelings. At times they treat me like I am lower that the mud on there shoes.

    They both carry on and keep doing it again, and again. It really makes me very depressed and wonder why I carry on sometimes.

    The sad thing is that they are both family so I cannot ignore them. I am sure that both of them don't believe that they are doing anything wrong.

    I am thick skinned, so I don't let anyone else get that close.

    I do however get pissed off with some people.

    I wish they would take responsibility for their actions or inactions and not blame me.

    I do also get fed up of saying sorry when is should be others saying sorry to me.

    Found out about Blogger many years ago, I can not remember how, but not something I really thought about doing until recently. 


    Except that I did create one many years ago. I did write the code that powered it. I used it for keeping snippits of technical information that I thought could come in useful. It was never public.


    I have started this for some where to put stuff of interest, other bits I want to publish.

    30 Days Of Me - Day 11 - Another picture of you and your friends

    The first picture is not of people (and not dogs)


    On the right is Michael Kent Audi Allroad with Chris Donaldson in the passenger seat usually) on the left is the X-trail with Stew Matthews usually my passenger.

    When at work sometimes you just need to get out. So what could be better that going out for a drive in the country at lunch time. All the lanes that we use are legal to drive on. We do get a few funny looks from the farmers, especially when they meet Mikes car first, as it does not look like a 4x4.

    If you really want to see some of the trips go to You Tube . This one get more interesting at about 6 minutes. If you want to see more look for uploads by the same person 4 out of the 5 are mine.

    Jaz (2) , Merlin (3) , Toby (2) and Charlie (4). All the dogs are full brothers, with Jaz and Toby being from the same litter.

    Babs (and her club) were as asked to put on a display at a local airbase at short notice for the Ops group. We as club members were more than happy to help out.

    The Club is called 'Fun And Run Together' or FART for short. Yes there are lots of school boy/girl giggles over the name.

    30 Days Of Me - Day 09 - Something you’re proud of in the past few days.

    Sorry, the other one is about the dogs.


    When you start competing you need to get your dog measured Toby came in as 'Standard' by 5mm this was at 18 months. You also need to get them re measures some time after they are 2 years old.


    This time he came in at maxi by 5mm, this has taken the jump hight from 550mm to 650mm, and running against more dogs.


    Back in May we took Charlie & Toby to an agility show in about 2 hours away. We were asked if we could go by a friend of ours who was judging there.


    I had been running Toby for the past year or so and we had both been improving. However at any shows we had always had faults.


    This show was his first at Maxi and things were going the same a usual, fences down. One of the events is called 'Gamblers', in this you pick your own course and each obsticle is given a different points value. You have to get the maximum points in an allotted time. At the end of the time you hava a set of obsticles to complete called 'The gamble'. This gamble at the end usually has two different ways to do it, giving you different points.


    What I am really proud of is that we completed the course that I wanted to do, in the time specified, and then completed the high point gamble as well


    To top it all, when the results came out, we came first so got a piece of glass as well.
