Monday Munchies - Devils on horseback
Ingredients
24 Prunes. Get the ready to eat ones with the stones removed.
12 rashers Streaky Bacon
50g Mango Chutney (Optional)
Brandy or Tea for marinating
Preparation
Pre-heat oven to 200°C: 400°F: Gas 6
Soak the prunes in either brandy or tea for between 30 minutes and 24 hours, then remove the stones if you did not buy the ready to eat ones.
Stuff each prune with ½ tsp mango chutney. (optional)
De-rind and stretch the bacon with the back of a knife to prevent it shrinking, cut each rasher in half.
Wrap a piece of bacon round each prune.
Place on a baking tray.
Keep them packed up tight so that they don't come apart (alternatively pierce with a cocktail stick to prevent this).
You can prep them up the night before so all you have to do is
Bake for about 8 minutes.
Server with your Turkey.
